Classic Pesto Sauce

  • pine nuts or walnuts - 1/2 cup fresh basil
  • or parsley - 4 cups
  • finely grated Parmesan cheese - 1/2 cup
  • clove of garlic - 1 Each
  • salt andPepper - - To taste
  • olive oil - 1/2 cup

Instructions Preheat oven to 175 degrees.Put the nuts on a baking sheet and bake in the oven until golden and fragrant, tossing occasionally, 5 to 8 minutes.Give nuts to cool completely.In a food processor combine the toasted pine nuts, basil, Parmesan and garlic, season with salt and pepper.While processor works slowly pour olive oil.Beat the mixture until smooth.If you are not using the sauce immediately, cover it with plastic wrap and refrigerate - this will help keep the bright color of the sauce.Pesto sauce can be stored up to three days.
