Meringues-hearts with fruit filling

  • egg whites - 2 pieces
  • sugar - 3/4 cup
  • salt - 1 pinch
  • vanilla extract - 1/2 teaspoon of powdered sugar

  • For the filling: egg yolks - 8 pieces
  • passion fruit juice - 1/2 cup
  • sugar - 1 cup
  • salt - 1/8 teaspoon
  • butter - 10 Art.spoons

Instructions Preheat oven to 90 degrees.Shots baking sheet with parchment paper.4 Make a pattern of hearts.Set aside.In heatproof bowl of an electric mixer over a saucepan of boiling water, mix egg whites, sugar and salt.Whisk until the sugar dissolves, 2 to 4 minutes minutes at medium speed.Add vanilla.Put the mixture into a pastry bag with a round head.Squeeze mixture of meringue on the pattern of the heart around the outer edge, height 2.5 cm. Repeat with the remaining patterns.Bake in oven for 20 minutes.Reduce heat to 80 degrees and bake 1 1/4 hour to 1 1/2 hours.Give cool completely in the pan.Meringues, may be stored in a sealed container at room temperature for 1 day.Prepare the filling.Mix

the egg yolks, passion fruit juice and sugar in a saucepan.Cook over medium heat, stirring constantly with a wooden spoon, until the mixture thickens, about 8 to 10 minutes.Remove the pan from the heat.Add salt and butter, stirring until smooth.Strain through a fine sieve into a bowl.Cover with plastic wrap, place in refrigerator for 1 hour or up to 1 day.Fill each meringue fruit filling and garnish with raspberries.Sprinkle with powdered sugar and serve.
