Red potatoes with blue cheese, bacon and onions

Ingredients:
  • red potatoes - 700 grams
  • coarse salt - 3 tbsp.spoon
  • blue blue cheese, plus cheese for garnish - 45 Grams
  • nonfat cream - 1/2 cup
  • red wine vinegar - 1 teaspoon
  • mustard - 1 teaspoon minced fresh
  • green onions, plus 1 teaspoontablespoon for garnish - 1 tbsp.Spoon
  • bacon - 8 slices
instructions

Put the potatoes in a saucepan.Cover with water, add salt and bring to a boil.Cook for about 12 minutes.Drain and let cool slightly.Meanwhile, mix blue cheese, cream, vinegar and mustard in a bowl.Add to mass potatoes, green onions and bacon pieces.Serve with blue cheese and remaining bacon, seasoned with green onions.
