Pizza "Three cheese" with pesto sauce

  • medium potato - 1 Each
  • flour - 300 grams
  • wheat flour - 150 grams

  • olive oil - 1/4 cup (Pesto sauce)
  • salt - 1 / 2-1 1/2 teaspoons ((to taste) Pesto sauce)

1. Make Pesto Sauce.Fry walnuts in a small skillet over medium heat until fragrant, about 5 minutes.Takeout walnuts aside and repeat with the cloves of garlic (about 5-7 minutes).Give garlic to cool, peel and chop.2. Place the walnuts, garlic, basil, parsley, olive oil and about 1/2 teaspoon of salt in the bowl of a food processo

r and mix until the consistency of mashed potatoes.Put the sauce in a small bowl and mix with finely grated Parmesan cheese, add salt to taste.Cover and refrigerate until needed.3. To make the pizza dough.Peel and chop the potatoes.Boil the potatoes in a medium saucepan until tender, 10-15 minutes.Drain potatoes and let cool.Mix the flour, yeast and salt in a large bowl.Grate the potatoes into a bowl.Beat the mixture together.Mix at low speed for dough hook.Add water and mix.Add 2 tablespoons of olive oil and stir for a few seconds, until the dough is smooth (it will be slightly sticky).4. Put the dough in a lightly oiled bowl, cover and let rise in half (about 45 minutes).Pour the remaining 1/4 cup of olive oil in the form of pizza and set aside.5. The finished dough hit the table and roll out on a floured surface into a circle with a diameter of about 35 cm. Put the pizza in the form.Preheat oven to 260 degrees.To form a crust on the edge of the decorative pizza.Cover and allow to rise until the dough will increase in volume by half, about 30-40 minutes.Several times prick the surface with a fork.6. Reduce the oven temperature to 220 degrees and bake the pizza for 15 minutes.Remove from the oven and grease with pesto sauce on top.Put slices of mozzarella and sprinkle with grated Parmesan and Provolone.Return the pizza in the oven and bake until cheese is melted, 10-15 minutes.If desired, put a form in the upper part of the oven and bake for another 5 minutes, until the cheese will not appear brown spots.7. Allow to cool for 5 minutes before slicing and serving.
