Mushroom pasta with ricotta

  • salt and pepper - - To taste
  • pasta rigatoni or other short pasta - 360 grams
  • oil - 2 tbsp.spoon
  • small onion - 1/2 Pieces
  • Kremin fungi or mushrooms - 330 Gram
  • ricotta cheese - 1 cup of lemon juice
  • - 4 teaspoons

Instructions In a large pot of boiling salted water to boil pastareadiness.Set aside 3/4 cup of the liquid that remains after cooking, drain and return the pasta to the pot.Meanwhile, in large skillet, melt 1 tablespoon butter over medium heat.Add the onion and cook until soft, about 4 minutes.Add wine and cook until most of the liquid has evaporated, 4 to 6 minutes.Add mushrooms, season with salt and pepper and cook until browned, about 8 minutes.Remove pan from heat and add 1 tablespoon of butter.Add mushroom mixture, ricotta and lemon juice, mix well.Add a sufficient amount of liquid.Sprinkle with Parmesan and serve.
